Chocolate mousse

  • Step 1
    Place the chocolate in a heatproof bowl over a pan of gently simmering water (don't let the bowl touch the water). Stir until melted. Remove bowl from heat and set aside to cool slightly.
  • Step 2
    Place eggs and sugar in a large bowl and beat with electric beaters for 5 minutes, or until mixture is pale, thick and doubled in volume. Fold in cooled chocolate and cocoa powder until combined.
  • Step 3
    In a separate bowl, whip cream until thickened (be careful not to over-beat). Use a large metal spoon to carefully fold the cream into the chocolate mixture, trying to keep the mixture as light as possible. Spoon into 6 serving glasses and chill in fridge for at least 1 hour. Remove from fridge 15 minutes before serving, then top with extra whipped cream and grated chocolate to serve.

Rich dark chocolate & pistachio gelato recipe

Rich dark chocolate & pistachio gelato recipe





Serves 6

Ingredients:
 5 ounces dark chocolate (60 percent or 70 percent),
chopped 2 cups milk
2 ounces sugar
1/4 cup ground pistachios, plus more for garnishing

Directions:
Over low-medium heat, boil a half-filled pot of water. Put a heatproof bowl or a smaller saucepan on the pot of boiling water. Melt the chocolate in the smaller saucepan. While waiting for the chocolate to melt, put the milk in another saucepan over low-medium heat. When it is almost boiling, turn off the fire then remove from the heat. Mix the melted chocolate and sugar into the hot milk. Use an immersion mixer to mix the chocolate better with the other ingredients. Let it cool for 2 hours. Transfer it to an ice cream maker and let it churn for 25-30 minutes or follow the instructions of your ice cream maker. Add the pistachios 5 minutes before ending the churning process. Garnish with pistachios if desired.
